The down side to this recipe is the sodium and cholesterol. If these two guilty pleasures are a problem for your health, there are alternatives. Replace the chicken with tofu or Textured Vegetable Protein (TVP). TVP is generally available in health food stores or from Amazon. There's probably a small selection of "fake" meats in your local grocery store in the frozen foods section.
As for the sodium, which is mostly from the chicken broth, look for low sodium broth (any flavor). Also the more colorful the vegetables, the better they are for you.
